It depends……… he doesn’t like cookie crusts? or doesn’t like regular flour crusts?
If he doesn’t like flour crusts you can switch it to a cookie based crust. If he doesn’t like cookie crusts you can just omit the cookie crust and do something like a mason jar layered dessert. You can use typical pie fillings as layers and leave out the cookie crust layer and replace it with another ingredient.
You can also use this idea for trifles, parfaits (since they’re also layered desserts)
