Root beer Float Cupcakes!

For those who don’t know…. a root beer float is a mix of root beer with scoops of vanilla ice cream served in a glass with a straw! (root beer has no alcohol, it’s not like real beer). This genius recipe turns your cupcakes into a root beer float!

 As you can see, you scoop out some of the middle of your cupcake and add ice cream and a touch of root beer inside for taste and then cover it up with whip cream just like a real float! 

 But make sure you prepare and eat this ASAP cuz it doesn’t hold up for long!

Recipe:

Cupcakes

• 2 cups root beer (I used Boylan because it was easy to find and made with cane sugar)
• 1 cup dark unsweetened cocoa powder
• 1/2 cup (1 stick or 4 ounces) unsalted butter, cut into 1-inch pieces
• 1 1/4 cups granulated sugar
• 1/2 cup firmly packed dark brown sugar
• 2 cups all-purpose flour
• 1 1/4 teaspoons baking soda
• 1 teaspoon salt
• 2 large eggs

Toppings

• 1 1/2 cups heavy or whipping cream
• 3 tablespoons powdered sugar
• 1/2 teaspoon vanilla extract
• Pint of vanilla ice cream (you’ll have leftover; you’re welcome)
• Maraschino cherries (optional)

Peaches & Cream Jello (with Schnapps)!

2 (3 oz) packages of peach flavored gelatin
3 1/2 cups boiling water
1 1/4 cups cold water
3/4 cup peach schnapps (or substitute cold water for non-alcoholic version) 
1 (14 oz) can sweetened condensed milk
1 (15 oz) can sliced peaches
2 envelopes Knox unflavored gelatin

Help tip from link:

•  Firstly select an appropriate mold. Use a traditional decorative metal or plastic mold. (Glass and ceramic molds are heavy and make unmolding the gelatin more difficult). Also choosing a mold that is the same volume as your recipe, in this case a 7 or 8 cup mold, will make unmolding easier.

Part 3: Westies Dog Cupcakes 

Okay, so while I was away this week moving. I had to go to the library to check my mail while my computer was being shipped out.

At the library I found a book called “Hello, Cupcake” that I had heard of before and that here on tumblr their cupcake designs reign supreme. so I thought it would be a good thing to actually give the recipes of these tumblr sensations instead of just posting the great pics! I’m also including some stuff from their new book “What’s New Cupcake”

I decided to do a several part series on how to do  **some** of these cupcakes.

I’m starting with “Shark Attack” cupcakes because these cupcakes haven’t been reblogged to death by our tumblrs, but no worries the really popular cupcake designs are coming also…
