food coloring is not suppose to give it flavor. sometimes the red food coloring can give a bad flavor (after taste) to the mix so buying something like ‘no taste’ red food coloring from wilton helps a lot.
If used correctly (as your recipe says) you should be fine as far as ratios go. If you over do it it can affect your cake mix, but that goes for any ingredient you over do ratios on.

The whole red velvet debate is really interesting and people can get really passionate and defensive about it… lol… sometimes i just have to laugh cuz people take it to another level. haha
I don’t know really how to describe the taste I think because it’s traditionally made with buttermilk, vinegar, cocoa and then the cream cheese topping it gives it a tangy/sweet taste that sets it apart from more traditionally sweet cakes
The cocoa (which very little is traditionally used) gives off the impression it might be a chocolate cake, but it clearly is NOT although people like to describe it as a chocolate cake…. debate, debate, debate lol
The red food coloring doesn’t add flavor to the cake but it does make it stand out from other cakes because it’s so recognizable because of the vibrant/or deep red color (it gets deeper depending on how much cocoa u use)
